Banana, coconut and cardamom bread
Our first recipe is a great, easy recipe perfect for a Sunday afternoon or more special occasion. The coconut flavour spices up the normal banana bread, which comes from coconut oil and yoghurt. This can also be toasted for breakfast or brunch! The only change you need to make is using 100g of plain flour and 100g of the Tide Mill’s Fine Flour.
Next up is a classic – coffee cake! Extremely quick and easy to make – perfect for first-time bakers or lovers of baking. The sponges can be frozen if you’d like to save time. This recipe is great for celebrations, coffee mornings, bake sales, or even if you just fancy some cake! Just use 85g of self-raising flour and 85g of fine Tide Mill flour, plus level tsp of baking powder.
Pax cakes were a tradition during Tudor times, especially on Palm Sunday. These were given to congregations by England vicars and many churches keep this tradition. Again, another easy recipe and fun to make.
This simnel cake recipe is made in a tin, making it so much easier. Can be served warm straight out of the oven, topped with any kind of jam, or saved later. There are some different variations of the cake, but this classic works perfectly for afternoon tea or a morning baking session.
A great, healthy alternative to the usual sugar-filled pancakes. These are perfect if you’re on a low-calorie diet or just fancy something different! Making slight tweaks to your normal recipe will make such a difference and they taste just as good. Make sure to use the Tide Mill’s fine flour for these.
